Key Responsibilities For Line Cook - Prepare and execute menu items in accordance with established recipes, portion controls, and presentation standards for the hotel’s restaurant, banquet, and room‑service operations. - Maintain a clean, organized, and safe work station, adhering to the Canada Food Inspection Agency (CFIA) regulations and Marriott’s food safety protocols. - Operate kitchen equipment such as grills, ovens, fryers, and slicers safely and efficiently. - Monitor inventory levels, communicate shortages to the Sous Chef, and assist with receiving and proper storage of deliveries. - Collaborate with the culinary team to ensure timely service during peak periods, special events, and private functions. - Participate in daily prep, mise en place, and end‑of‑shift cleaning duties, ensuring compliance with sanitation standards. - Contribute ideas for menu enhancements, cost‑saving measures, and operational improvements as directed by the kitchen leadership. Required Qualifications - High school diploma or equivalent; culinary certificate or apprenticeship completion preferred. - Minimum of 1‑2 years of proven experience as a line cook in a full‑service hotel, resort, or upscale restaurant environment. - Valid Food Safe Level 1 certification (or ability to obtain within 30 days of hire). - Knowledge of Canadian health and safety regulations, including WHMIS and occupational health standards. - Ability to work flexible schedules, including evenings, weekends, holidays, and occasional overtime. - Strong physical stamina to stand for extended periods, lift up to 25 kg, and work in a fast‑paced kitchen environment. Desired Skills - Familiarity with a variety of cooking techniques (grilling, sautéing, braising, baking). - Basic understanding of cost control, portioning, and waste reduction practices. - Excellent communication and teamwork skills, with a proactive attitude toward problem‑solving. - Ability to adapt quickly to menu changes and special dietary requirements (e.g., gluten‑free, vegetarian). - Experience with inventory management software or point‑of‑sale (POS) systems is an asset.
